KFCA 3 Days Intensive Certifications Course



You will learn all the flowers that taught in basic and advance level classes in this 3 days intensive Certificates course. Besides, 3 piping medium - Jellycream, Buttercream and Bean Paste will be teach in this single course.
3天密集證書班,將學到所有基礎班及進階班的唧花及調色技巧。一個課程學三種素材。

~~This class is open to all level, with super small class size, maximum of 2 students, to ensure each students get noticed.

Day 1:

Day 2:

A1) Bean Paste Half Corsage Rice Cake

A3) Buttercream Centre line with Galaxy effect

A4) 3D flower pot




- Flower arrangement on a flower point
- 5”real cake and mask as a flower pot

韓式唧花證書課程




韓式唧花追求自然唯美,媲美真花,深受大家喜愛。教學會使用進口韓國白牛油,製作出透明感的花花,能夠充分的展現韓式唧花既美。

導師曾跟隨Better Cake, Kimncake, Sugarpress 等多位韓國名師學習唧花。早在2015年已經得到韓國 Korea Flower Cake Association (KFCA) 的認可資格,其後更以其優秀的韓式唧花蛋糕在 Food and Hotel Asia 2016 奪得銀牌獎,技術絕對得到世界級專業評審的肯定。

自2016年5月起導師更成為KFCA的主考官之一,同學完成指定的證書課程,便可申請考取 KFCA 的 Flower Decoration Master 基礎 (Master 2) 及進階 (Master 1) 證書。


課程分為基礎班及進階班,2017課程覆蓋buttercream, jellycream及bean paste。完成相關課程後,同學可自費申請 KFCA 的 Flower Decoration Master證書。

秉成韓國教唧花傳統,採用非常小班教學。每班最多3位同學,務求有充足時間指導每位同學。重點在於學習唧花技巧,調色技巧和抹餅技巧。蛋糕或dummy cake將會預先準備。

課堂中會提供所有所需的物資及材料,課程完結時請交還。部份裱花咀及工具亦可出售,如有需要,請預先通知。

Being fascinated by beautiful Korean buttercream flower cakes, Holly Kwan has been learning Korean Flower Piping and Flower Cake Making from well-known Korean teachers like Better Cake, Kimncake, Sugarpress and etc. She also became an accredited tutor in 2015 for the certificate courses of Korea Flower Cake Association (KFCA). She is one of the first KFCA instructors in Hong Kong. In April 2016, Holly won a Silver Medal of cake competition in Food and Hotel Asia 2016 with her Korean Flower Cake creation.

From using Korean White Butter, Korean piping nozzles, to small class size. All Korean Flower Cake courses designed by Holly were strictly followed the guidelines and best practice of KFCA to ensure each student will get noticed and perfect translucent buttercream flowers will be made. In May 2016, she became an Examiner for KFCA certification. Upon completion the certificate courses, students are entitled to apply the Flower Decoration Master Level 2 (Basic) and Level 1 (Advanced) Certificates. KFCA is one of the biggest Flower Cake associations in South Korea. Famous cake artists like Kimncake and Better Cake are also members of KFCA.


Certificates are mainly divided into basic and advance levels, while A Bite Patisser's 2017 new curriculum has incorporated Jellycream and Bean paste into the buttercream curriculum. Upon completion of courses, students are entitled to apply for KFCA Flower Decoration Master certificates. The certification fee will be charged separately by KFCA.

Follow the best practice in Korean piping classes, the maximum student per class is 3 to ensure each student gets noticed. Classes will be focusing on flower piping, colour toning, and cask masking. Most of the cakes or Dummy cakes will be prepared in advance.

Below is the details of Korea Flower Cake Association (KFCA)'s certificate. It is following exactly the requirement from Korea. It is students' own consideration to apply for the certification or not.

There are 2 levels of KFCA certificate.

1) Flower Decoration Master Basic (Master 2)

- For Student completed KFCA basic classes
- 15 type flowers, including Rose, Mini Rose, Unbloomed Rose, Apple Blossom, Bud, Leaf, Chrysanthemum, Freesia, Raspberry, Scabiosa, Ruffle Rose, Ranunculus, Narcissus, Peony, Victoria Rose.

2) Flower Decoration Master Advanced (Master 1)

- For Student completed KFCA advanced classes
- 18 type of flowers, including Upgraded Peony 1, Upgraded Peony 2, Dahlia, Tulip, Lisianthus, Hydrangea, Rice Flower, Blueberry, Carnation, Anemone, Hanoi Ranunculus, Cherry Blossom, English Rose, Pine Cone, Created Flowers, Wax Flower, Lamb’s Ear.

A Bite Patisserie's teacher is one of the examiner of KFCA. Upon completion of certificate classes, students are entitled to apply for KFCA's Flower Decoration Master Basic (Master 2) and Advanced level (Master 1) certificate. Korea Flower Cake Association is a government recognized professional association and one of the biggest Flower Cake Association in South Korea . Other famous Korean Flower Piping masters, like Kimncake and BetterCake are members of association, too.

Buttercream vs Bean Paste vs Jellycream







Buttercream

Korea glossy buttercream is sweet and full of milk flavour.
The making is a little bit different from traditional buttercream, so as to make transparent glossy buttercream to pipe lovely realistic flowers.
Teaching will be using finest ingredients Korea Seoul Milk Butter, with A Bite Patisserie's low sugar formula, everyone can learn and pipe glossy real flowers.

做法有別於一般buttercream,能夠做岀極具透明感的花,充分展現韓式唧花既自然唯美,媲美真花,深受大家喜愛。
教學會使用進口韓國白牛油,配合低糖配方,製作出透明感的花。

Bean Paste

It is said that Korea Flower Piping was invented by Korean housewives with white bean paste as decorations for their traditional celebration cake - Korean ricecake.
White bean paste is highly flexible, which the flowers piped is the most 3D out of the 3 medium.
Despite the fact that the taste and texture of bean paste and rice cake is not everyone's flavour, with natural colour powder, it is the Korean's flavourite healthy ricecake.

據說韓式唧花源於韓國家庭主婦用白豆蓉唧花為她們的節慶米糕做裝飾。
白豆蓉可塑性極高。唧出來的花最立體。配上天然蔬果色粉,是韓國人正宗的健康蛋糕。
唯豆蓉及米糕的味道及口感不是人人喜愛。

Jellycream

Jellycream is invented by a Indonesian in late 2015, and got widely spread in Malaysia. Original receipt is made with Vietnam's Jelly powder. Its sweet flavour is much lighter and less sweet than buttercream and jellycream.
After learning from a Malaysian master, with multiple times of fine-tuning, A Bite Patisserie's secret formula of Agar Agar flower is developed. Agar Agar is a highly recognized healthy food, with its low calories, Jellycream makes Korea Flower Cake a healthy option.
A Bite Patisserie's secret formula is made up of Japan, Korea and local ingredients that can be easily purchased in Hong Kong, its sweetness is adjustable.
Besides, Jellycream is rather high-resistant to heat, so it is very good medium for beginner to learn piping.
